Lebkucken (German Cookies)
1 ½ lbs brown sugar
3 eggs
½ cup dark molasses
½ cup honey
1 Tbsp cloves
1 Tbsp allspice
2 Tbsp cinnamon
1 teas salt
3 cups chopped walnuts
½ lb (8 oz) dried fruit blend (King Arthur)
6 cups flour
Dissolve 1 ½ Tbsp soda with ½ cup water.
Cream brown sugar with the eggs. Continue mixing while adding molasses, honey, spices and salt. Stir in walnuts and fruit. Add the flour alternately with the water/soda mixture. Stir until thoroughly combined.
Set aside in large bowl (covered) in cool place (not refrigerator) 10 days to 2 weeks. Roll out in batches on floured board. Dough should be ¼” thick. Cut in strips to desired width (approx 3”). Place on parchment lined or greased cookie sheets. Bake at 325 degrees for 12 minutes, give or take 1 to 2 minutes.
While cookies are still warm, slice cookie strips cross wise to 1” or less. Cool on cookie racks.
